This was a very successful attempt at making my favorite bran muffin mix recipe animal product free [and more nutritious].
1 box [7 oz] Hodgson MIll Bran Muffin Mix
1/2 cup Vanilla Almond Milk
1/4 c applesauce
1 mashed banana
1 Tbsp of olive oil
2 Tbsp of Flax seed
2 Tbsp of Chia seed
Handful of sliced almonds
Preheat oven to 375. Mix first 7 ingredients in a bowl. Once mixed, fold in almonds. Spoon mixture into olive oil greased muffin cups, and bake for approximately 20 minutes. Let cool for at least 15 minutes. Make sure to remove the muffins from the tin after 15 minutes to avoid sogginess due to non-sticking with olive oil. Yields 6 muffins.
